Recommended Recipe – Homzi’s Spring Berry Salad

We’re excited to share the recipe for Homzi’s Spring Berry Salad. This salad is always a guest favorite at our springtime parties. Plus, it’s an easy menu addition if you’re the host! 

Ingredients:

• 5 cups baby spinach leaves or gem lettuce leaves, washed and dried
• 1 cup sliced strawberries (raspberries and/or blackberries are a great addition or alternative too!)
• 1/2 cup crumbled feta cheese
• 1/4 cup sliced almonds, toasted
• 1/4 cup red onion, thinly sliced
• 1/4 cup balsamic vinaigrette dressing
• Salt and pepper to taste

Instructions:

1. Toast the sliced almonds in a dry skillet over medium heat until lightly golden brown. Be sure to stir them frequently to prevent burning. Once toasted, remove from heat and set aside.
2. In a large salad bowl, combine the baby spinach, sliced strawberries, crumbled feta cheese, sliced almonds, and thinly sliced red onion.
3. Drizzle the balsamic vinaigrette dressing over the salad. Start with a small amount and add more to your taste preference. Toss the salad gently to ensure all ingredients are coated evenly with the dressing.
4. Season the salad with salt and pepper to taste. We recommend going light on the salt since the feta cheese will already add saltiness.
5. Serve immediately as a light and refreshing side dish or add some grilled chicken or shrimp to turn it into a satisfying main course.
